Fresh Pineapple Juice
Ingredients :
· 2 large ripe pineapples
· sprigs of mint

Cooking Procedures :
1. Peel pineapples, core and cut into cubes.
2. Process in a blender or juicer and then strain the juice. Serve over ice and garnish with mint sprigs.
3. Makes 3 to 4 servings.
Many other varieties of fresh fruit can be turned into juice by processing in a blender or juicer. Whatever pulp remains can be removed with a slotted spoon before the juice is strained. If the juice seems too thick, dilute it with a little cold water.
JUICING CITRUS FRUITS
Pierce the fruit with a knife and microwave for 30 seconds or place in hot water for a few minutes. Then roll under your palm on a hard surface until the inside feels soft. Both heat and pressure release juice from the cells.
To quickly juice a small fruit or two, cut in half, hold the cut side of a half against the palm of your hand, and squeeze firmly. Seeds will be trapped inside.
To juice several fruits, use a citrus press, which often has a built-in strainer, or a wooden reamer, which requires straining the seeds from the juice.
Store citrus juice in a dark glass jar with a screw lid and keep it cold. Freshly squeezed juice retains nearly all its vitamin C for about 24 hours, although its flavor will deteriorate.
