Ingredient Substitutions For Diabetic




Compiled six lists of basic foods required daily by every diabetic. The lists, somewhat expanded to be more helpful. Remember, any food may be chosen from one list and substituted for another food within the same list in the amount specified.


MILK  contains: Carbohydrate –12 grams; Fat –10 grams; Protein –8 grams; Calories -170

Milk, Whole  1 cup (8 oz.) – 240 grams

Milk, Evaporated  1/2 cup – 120 grams

Buttermilk  1 cup – 240 grams

Milk, Skim  1 cup – 240 grams (You may add 2 fat substitutes when you use one cup of skim milk or buttermilk made from skim milk)

Milk, Nonfat Dry Powder  1/4 cup


VEGETABLE: A
You may eat as much of these vegetables raw as you wish, except tomatoes. (Limit to one tomato or 1/2 cup tomato juice at a meal.) If these vegetables are cooked, use as much as 1 cup at a time.

VEGETABLE: B   contains: Carbohydrate –7 grams; Fat –0 grams; Protein –2 grams; Calories -35

Use 1/2 cup:

FRUIT  contains: Carbohydrate –10 grams; Fat –0 grams; Protein –0 grams; Calories -40

Fresh, cooked, canned or frozen unsweetened fruits only.

Applesauce  1/2 cup

Apricots, Fresh  2 medium

Apricots, Dried  4 halves

Banana  1/2 small

Blackberries  1 cup

Blueberries  1/2 cup

Boysenberries  3/4 cup

Cantaloupe (6” Diameter)  1/4

Cherries, Raw, Sweet  10 large

Cherries, Canned, Red Sour  1/2 cup

Cherries, Maraschino  2

Dates  2

Figs, Fresh  2 large

Figs, Dried   1 small

Fruit Cocktail, Canned  1/4 cup

Grapefruit  1/2 small
