Lechon Kawali (Pan-Roasted Pork)

Filipino Recipe - Lechon sa Kawali (Pan-Roasted Pork)

Wednesday 7 Jun 2006

Lechon Kawali (Pan-Roasted Pork) is my mom’s favorite Filipino food dish. When I have a time to cook back then, she’ll request me to make some. She even asked the recipe so that whenever she craves for it, she can cook lechon kawali (pan-roasted pork) by herself.

I miss my mom … sad

Ingredients :

Pork
· 1-1/2 lb. pork liempo (pork belly), cut into serving pieces
· 4 cloves garlic, crushed
· 1/4 tsp. pepper or 1 tsp. peppercorns
· 2 tbsp. salt
· water, for boiling
· oil, for frying

Sauce
· 1 tbsp. soy sauce
· 2-1/2 tbsp. vinegar
· 1 clove garlic, minced
· chili peppers (optional)

(Measurement Guides)

Cooking Procedures :

1. Put pork pieces in a big pot. Cover with water. Add garlic, pepper or peppercorns and salt.

2. Bring to a boil. Lower heat and simmer for an hour or until meat is tender. Drain.

3. Deep-fry liempo pieces in batches until golden brown and blisters appear on skin.

4. Drain on paper towels.

5. Mix together all ingredients for the sauce.

6. Serve with chopped lechon kawali.

I know its gonna kill me one day but I love lechon. Im in a area where we dont have a filipino rest. that makes them all the time. Now I can make them at home. I used to drive all the way to San Diego but I found a Chinese Restaurant in Corona,CA called China Garden, yes a chinese restaurant to make lechon kawali to order call them 20 mins ahead of time, its quite good. They are a little stingy on the lechon sauce, so ask for extra.

Hi Sel,

By the way, I have been looking for the elusive recipe on how to make the Cebu Chorizo. I would greatly appriciate it if you do have one... I will be forever be greatful....
Thank you again for these great recipes you posted on this site... These is now my day in day out site at first glance when I come home from work....

Kind Regards
