Lechon Kawali (Pan-Roasted Pork)

Lechon Kawali (Pan-Roasted Pork) is my mom’s favorite Filipino food dish. When I have a time to cook back then, she’ll request me to make some. She even asked the recipe so that whenever she craves for it, she can cook lechon kawali (pan-roasted pork) by herself.

Ingredients :
Pork
· 1-1/2 lb. pork liempo (pork belly), cut into serving pieces
· 4 cloves garlic, crushed
· 1/4 tsp. pepper or 1 tsp. peppercorns
· 2 tbsp. salt
· water, for boiling
· oil, for frying
Sauce
· 1 tbsp. soy sauce
· 2-1/2 tbsp. vinegar
· 1 clove garlic, minced
· chili peppers (optional)

Cooking Procedures :
1. Put pork pieces in a big pot. Cover with water. Add garlic, pepper or peppercorns and salt.
2. Bring to a boil. Lower heat and simmer for an hour or until meat is tender. Drain.
3. Deep-fry liempo pieces in batches until golden brown and blisters appear on skin.
4. Drain on paper towels.
5. Mix together all ingredients for the sauce.
6. Serve with chopped lechon kawali.

hi,thank you very much for the best recipes you post in your website...i love to cooked and my husband love to eat filipino food even if he is an american.....lechon kawali i tried this recipe for my husband's birthday this coming monday....maraming salamat talaga.....keep up the good work and god bless you...

I ADORE this all time favorite dish! If you like it a little less on the greasy side, you can cook it in a pressure cooker while raised on rack so the fat drips off to the bottom. Or you can do this in a conventional oven but I suggest covering it with Aluminum Foil so that the fat doesn't spatter all over the place.

Lechon Kawali always ruin my diet.
Once you've tried lechon kawali, you can never get enough. I am recommending this recipe to those who haven't tried it. As for me, this is what i'm busy at the moment www.foodista.com/2008/05/08/brining-your-bird/. Hope it turns out good. G'luck to me.

The way I do it, after the boiling part, refrigerate overnight so that there is some "freezer burn" meaning, dehydration of the pork. This will help to make it crunchier. Instead of deep frying, use a turbo broiler. The melted fat drips away from the rack that you should use. Cook till light brown in color. Use a vinegar -garlic dip or thew bottled Mang Tomas Lechon sauce.

I know its gonna kill me one day but I love lechon. Im in a area where we dont have a filipino rest. that makes them all the time. Now I can make them at home. I used to drive all the way to San Diego but I found a Chinese Restaurant in Corona,CA called China Garden, yes a chinese restaurant to make lechon kawali to order call them 20 mins ahead of time, its quite good. They are a little stingy on the lechon sauce, so ask for extra.

i just visited your website by accident. actually, i was looking for the best recipe for baked lasagna. so glad, found your lechon kawali recipe. my husband melvin just loved this recipe. i always try to cook this for him but i end up sorry because it wasn't perfect all the time.
