Nanaimo Bars

Ingredients :

Base

  • 1/2 cup butter
  • 1/4 cup granulated sugar
  • 1/3 cup cocoa
  • 1 egg
  • 1-3/4 cup graham crumbs
  • 3/4 cup coconut flakes

Filling

  • 1/2 stick butter, softened
  • 3 tbsp. milk
  • 1 tsp. vanilla
  • 2 tbsp. custard powder
  • 2 cups icing sugar

Glaze

  • 3/4 cup semi-sweet chocolate chips
  • 3 tbsp. butter

Cooking Procedures :

  1. Prepare the Base: In a saucepan over medium-low heat, add butter, sugar and cocoa; stir to combine well. Add egg, cook and stir constantly until mixture thickens. Remove from heat. Mix in crumbs and coconut flakes. Press into a greased 8 or 9 in. square pan. Chill.
  2. Prepare the Filling: In a mixing bowl, beat together butter, milk, vanilla, custard powder and icing sugar; until light and fluffy. Spread evenly over base. Chill.
  3. Prepare the Glaze: In a small saucepan over low heat, melt butter and chocolate chips. Let the mixture cool slightly. Pour evenly over filling. Refrigerate.
