Ingredients : 1 can pineapple chunks in syrup (or tidbits in syrup) 2 boneless, skinless chicken breast, halves 1 tbsp. vegetable oil 1 tsp. crushed garlic 1 tsp. minced gingerroot 2 cups sliced celery 1 cup sliced green or red bell pepper 2 tbsp. soy sauce 1 tbsp. cornstarch 1 tbsp. white vinegar salt and pepper, to taste sliced green onions, for garnishing hot fluffy rice (optional) Cooking Procedures : Drain pineapple, reserving 1/4 cup syrup.
